A meal is not a meal unless there is a side of rice and beans. Rice is rich in starch and an excellent source of energy. Rice also has iron, vitamin B and protein.
Ingredients:
- 2 cups Organic Jasmine rice
- 1 cup frozen Lima beans
- 3 cups water
- 1 cup Coconut Milk
- 1 Tbs of Orgagoods Creole seasoning
- 3 tbs olive oil
- 1 tbs butter
- Small piece of Green Bell peppers (diced)
- 1 Scallion
- 1 Tsp salt (or to taste)
- Cloves
- 1/2 tsp thyme (2 sprigs)
Directions:
- In a large pot, add 3 tbs of olive oil, and sauté the lima beans for about 2 minutes.
- Add Orgagoods Creole seasoning, coconut milk, and mix thoroughly.
- Add cloves with the green bell pepper slice, the thyme and 3 cups of water to the pot and bring to boil.
- Sample liquid and add salt to taste.
- Mix in the rice and allow it to cook for about 20 min or until there is just a little amount of water left.
- Reduce the heat to medium and cover the pot with a lid and allow the remaining water to be absorbed. About 15-20 min.
- Turn off the heat and let it sit for an additional 5 minutes.
- Once cooked, fluff the rice and serve.
Rice is ready to be served and can be accompanied with your choice of sauce/meat/poultry.
