This chickpea salad is absolutely delicious! Packed with fresh Mediterranean flavors like bell pepper, parsley, red onion, and celery with a hint of lime and garlic for an extra zing, it's guaranteed to be a hit. Perfect for potlucks and picnics, this salad is also great for lunch, just make sure you serve up a generous portion.
INGREDIENTS
- 1 can chickpeas, rinsed and drained
- 1/2 red bell pepper, chopped
- 1/2 cup chopped fresh flat-leaf parsley (about 1/2 bunch)
- 1/2 cup chopped red onion (about ½ small)
- 1/2 cup chopped celery (about 2 ribs)
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons lemon juice or more if needed
- 1 clove garlic, pressed or minced
- 1/2 teaspoon sea salt
- 2 teaspoon of Orgagoods seasoning
- 3 Drops of my Ghost pepper hot sauce (optional)
INSTRUCTIONS
- In a medium bowl, combine all of the ingredients. Toss until combined. Taste and add additional lemon juice, or salt if necessary.
- Serve immediately, or chill until you’re ready to serve. Leftovers keep well, covered in the refrigerator.
LEFT OVER SALAD
Use your left over salad by warming it up in the microwave for 5-7 minutes. Add more avocado and some lime juice for more flavor. Grab a toast and spread for a healthy yummy lunch
